aloo paratha/ stuffed potato paratha

Ingredients

  • 3 tbsp oil/ tel
  • 1 tsp cumin seeds/ jeera
  • 2 small onion chopped/ kanda
  • 1 1/2 tbsp green chilly paste
  • 1/2 tsp turmeric powder/ haldi
  • pinch of asafoetida / hing
  • 1 tbsp of salt or as needed
  • 1/2 kg boiled potato/ aloo
  • 2 tbsp coriander / hara dhaniya
  • 1 tsp chat masala
  •  1/2 cup curd to serve
  • 1/2 kg knead whole wheat dough/ bhiga hua ata

Direction

  1. In a deep pan heat oil and add cumin seeds and let it pop nicely,
  2. After this add chopped onion and saute it for 2 to 3 minutes.
  3. Now add green chilly paste, turmeric powder, asafoetida (haldi), chat masala  and salt according to your taste and mix it and saute for 1 minute.
  4. Take boiled potato and mash it nicely with the help of masher or with your hands and add all the mashed potato into the tempering and mix it well with spatula and cook for 2 minutes until nice  aroma comes out and add coriander leaves into it.
  5. Your potato stuff is ready, let it cool for 30 minutes.
  6. Till then make balls of already knead whole wheat dough and also make small balls of potato mixture.
  7. with the help of rolling pin roll the dough to a small flat circle and place the potato ball in center of the dough circle and now close the potato ball with flat dough and cover it properly, with the help of wheat flour and rolling pin roll the flat circle (paratha like).
  8. Heat the pan with brushing some oil on it and roast the flat paratha on from both the sides till it gets light brown color.
  9. Your aloo paratha is ready and apply some butter or ghee on it.
  10. serve it with some fresh curd and enjoy.
